I understand that we can start to get U of T card starting from June 17, but don’t we have to bring in anything, ie. a letter from U of T to prove that we have officially accepted U of T and U of T has officially accepted us?

yes. yes you do: your letter of admission that has your name and student number, as well as some other form of picture ID. you probably should check the hours of operation of the t-card office before heading down though. you may also want to bring in some canapes and little fruit drinks with umbrellas because i am pretty sure that no one has ever brought something in for the people who work in the t-card offices and they would really like it.
